Potato Dishes That Will Fill You Up

comfort food potatoesPotatoes are a staple dish and an almost ubiquitous feature in most peoples’ diets. In one form or another, they accompany many main dishes in family homes and restaurants on a regular basis.

They can also be found in many comfort foods – sometimes on the side, sometimes as the main attraction. They offer great value for money, and are easy to prepare. Here are a few suggestions for potato-centric dishes which will make you feel warm and satisfied.

Baked Potatoes

An instantly recognizable potato dish you can make when you want something filling, but easy to prepare, is a baked potato. There are many different variations of this simple dish, so there’s bound to be one (or more) which will tickle your fancy.

At its most basic, all you need to do is wrap a large potato in foil, poke a few holes in it with a fork, and then letting it bake for about an hour – a little more or a little less depending upon the size of the spud in question. It does take quite a bit of time to cook it all the way through as the potatoes used are normally fairly large.

You can do this in the microwave if you don’t have an hour to wait, or if you are hungry, but it won’t have the same taste or texture as it does when you cook it in the oven.

I sometimes use my halogen oven for this. The taste and texture is just the same as when cooked in a traditional oven – but you don’t get much time saving as the potato is wrapped in foil. You don’t have to wait for the oven to heat up of course, so it is slightly faster.

If you like the skin crispy, rub the potato in a little olive oil and then sprinkle it with salt before you put it in the oven.

As far as fillings go, you can pretty much use whatever you have lying around. It’s a great way to use up any leftovers.

You can go with a standard baked potato with butter and sour cream, or go a little healthier by topping it with cottage cheese. Some other good toppings include bacon pieces, cheese, chives, chopped veggies, and guacamole.

Breakfast Potatoes

Fried potatoes for breakfast have always been a Sunday morning, big breakfast, treat in my house. Cook a few extra on Saturday and pop them in the fridge. Cut them into slices on Sunday morning – they cut easier having been in the fridge overnight, and then fry them for a few minutes in a normal frying pan.

If you prefer a slightly different approach, there are also some variations for breakfast potatoes that you can try. Baking or frying hash brown patties is a good alternative which many people enjoy – and you can buy them frozen at the supermarket so they’re always handy when you need them.

Roast Potatoes

Making roasted potatoes is a really easy way to have a potato side dish or a main potato course, depending on which way you go with the other ingredients. They can be simple roasted potatoes with some garlic salt sprinkled on top and baked, or you can top them with cheese and bacon, or a variety of other seasonings. If you mix in breakfast meat and eggs, or go a different route with chicken, they become a main course instead. Roasted potatoes are crispy, delicious, and usually simple to make.

Homemade French Fries – Or Chips – Or Potato Wedges

I think that everybody loves fries – but they’re hardly the healthiest meal available. However, it’s definitely possible to make your fries quite a bit healthier.

One simple technique is just to bake them instead of frying them. Just cut up your fries as normal, put them in a baking tray and then drizzle a little olive oil over them (you don’t need much at all). You can add salt, pepper and paprika if you like (I do).

Pop them into the oven at 200 C (400F). Cooking time will vary according to how thick/thin you’ve cut them. For skinny fries, about 25 to 30 minutes should do the trick. If you’ve cut them thicker, about 40 to 45 minutes will do it. Give them a stir about halfway through to make sure they cook evenly. Personally, I cut nice thick potato wedges and season with salt pepper, paprika and rosemary. Sometimes I add a little garlic, just for a change.

If you like your fries nice and crispy, try doing them in a halogen oven. These use infrared as well as convection – so you can really crisp them up if that’s how you like them.
